Probabilistic Model of Drying Process of Leek

چکیده

Convective drying is the most common method, and mathematical modelling of dewatering process an essential part it, playing important role in development optimization devices. Modelling leek can be difficult as specific structure this vegetable, which slices are delaminated into uneven single rings at different times during material surface changes more than other vegetables. This study aimed proposing a theoretical model for convective drying, based on laws heat mass exchange, should take account observed random disturbances form coefficients model. The paper presents non-linear water content with coefficient n. Values n, were considered to variable, obtained using Monte Carlo inversed distribution function probabilistic method. when n gives good approximation measurements approximately 1–2 kg H2O/kg d.m.
